Smoked Salmon and Potato Breakfast Scramble

8oz Alaska Smokehouse Smoked Salmon, flaked

8oz Potatoes, Diced

1 Green Bell Pepper, Diced

1 Small Onion, Diced

1/3 cup Water

1 Tablespoon Olive Oil

4 Large Eggs, Beaten with 1 Teaspoon Milk (Optional)

1/4 Teaspoon Salt

Ground Black Pepper (Optional)

1/2 Cup Grated Parmesan Cheese (Optional)

Diced Parsley (Optional)

Diced Chives (Optional)

In a large cold skillet with a lid, add potatoes, water, olive oil and salt.  Cover and bring to a boil on high.  Cook until water is evaporated, about 5 to 6 minutes.

Once water is evaporated, uncover the potatoes and stir to loosen them.  Add the onion and bell pepper and sauté for another 5 or 6 minutes until the onion and bell pepper have softened and the potatoes have finished cooking.

Add the flaked smoked salmon and stir to combine.

Pour the beaten eggs over the mixture in the skillet and scramble until the eggs are just about cooked.  Remove skillet from heat

Sprinkle with shredded cheese and black pepper if desired.  Top with diced parsley and chives if desired.

Add a few dashes of your favorite hot sauce to spice things up!
