Smoked Salmon Club Sandwich

 

Ingredients:

  • 3 Slices of bread or a roll (To reduce carbs, use Atkins Sliced Bread Duet -White)
  • 4 oz. Alaska Smokehouse smoked salmon (per sandwich)
  • Green leaf lettuce - 1-2 leaves per sandwich
  • Sliced tomatoes
  • 3 Slices of bacon per sandwich
  • Dill Aioli
    • 1 Cup mayonnaise
    • 1 Tablespoon of Horseradish sauce
    • Juice of 1/2 lemon
    • 1 Tablespoon of dried dill weed

Procedure:

  1. Cook bacon according to package instructions.
  2. Toast your choice of bread or roll.
  3. Make the Dill Aioli by mixing all the ingredients in a bowl.
  4. Spread some of the Dill Aioli on your toasted bread or roll.
  5. Layer your club sandwich starting with lettuce, tomato and bacon on the bottom slice of bread.
  6. Top with the middle slice of bread.
  7. Add another layer of lettuce on the middle slice of bread.
  8. Arrange smoked salmon on top of lettuce.
  9. Top with the final slice of bread and secure each half with 2 toothpicks.
  10. . Cut sandwich diagonally and serve with chips or french fries.
