Pesto Pasta with Smoked Salmon

Ingredients:
8oz Alaska Smokehouse Smoked Sockeye Salmon
1 cup Pesto Sauce
1 pound Pasta
1/4 cup Shredded Parmesan
1/4 cup Pine Nuts
Procedure:
Cook pasta in a large pot of boiling water, per instructions
Remove skin from smoked salmon if desired and flake smoked salmon
In a dry medium skillet, toast pine nuts for medium-low heat for about 2-3 minutes, stirring frequently until fragrant. Do not leave unattended. Remove pine nuts from skillet immediately to a small plate or bowl so the nuts don't burn.
Increase burner temperature to medium heat and using the same warmed skillet you toasted the pine nuts in, add pesto and smoked salmon and warm through. If thickening too much, reduce heat and add a splash of pasta cooking water.
Drain cooked pasta, reserving 1/2 cup of pasta cooking water.
Toss pasta with pesto and smoked salmon in warm skillet, adding pasta water to loosen sauce if it becomes too thick.
Garnish with shredded parmesan and pine nuts.
