Smoked Salmon Melt
Ingredients:
8oz Alaska Smokehouse Smoked Salmon, drained and flaked
2-3 tablespoons of mayonnaise
1/4 teaspoon dried dill
1/4 teaspoon lemon pepper or lemon zest and black pepper
2 stalks celery, diced
1/2 small red bell pepper, diced
Sliced pickles
4 slices cheddar cheese
4 slices sourdough bread
2 tablespoons butter
Salt to taste
Preparation:
Mix together in a large bowl smoked salmon, mayonnaise, celery, bell pepper, and seasoning. Heat a large pan on medium low heat until warm. Butter one slice of bread, then place butter side down in the pan. Layer the sandwich with 2 slices of cheddar cheese, pickles, salmon mixture, cheddar cheese, then top with second buttered piece of bread. Repeat with second sandwich.
Cook sandwiches on one side for four to 6 minutes, then flip. Reduce heat to low, then cover the pan and cook an additional 4 to 6 minutes. Sandwiches should be golden brown, and the cheese should be melted. Check sandwiches as they cook to prevent burning. If sandwiches start to look dark, flip them.
