Smoked Salmon Cobb Salad

Ingredients:

1 head iceberg lettuce, shredded

8oz of Alaska Smokehouse Smoked King Salmon

2 hardboiled eggs

6 slices of bacon, cooked, drained, and crumbled

2 tomatoes, seeded and chopped

3 green onions or scallions, chopped

1 medium cucumber, seeded and chopped

1 avocado, diced

Blue Cheese Dressing

Crumbled blue cheese

 

Procedure:

Cook bacon to preferred texture, then drain and crumble

Boil eggs to desired doneness, then remove shell and cut into slices or wedges

Open smoked salmon pouch and remove skin if desired, then flake

Wash and shred lettuce

Seed and dice tomatoes and cucumbers, or slice depending on preference

Dice onions/scallions

Dice or slice avocado

Assemble salad by layering lettuce in bottom of bowl or plate.  If desired, drizzle lettuce with blue cheese dressing, or set aside dressing for people to add to salad as they wish.  Top with tomatoes, cucumber, and avocado.  Then add smoked salmon, bacon, and egg wedges.  Garnish with diced green onions/scallions and blue cheese crumbles. 

Serves 2 as dinner salads or 4 as side salads.
