Smoked Salmon Fried Rice
Ingredients:
4oz Alaska Smokehouse Smoked Salmon, skin removed and flaked
1-1/4 cups of cold cooked rice
1 large egg, beaten
2 scallions, thinly sliced, separate white and green pieces
1/2 cup frozen peas
1 red pepper, diced
1 yellow pepper, diced
1/2 tablespoon soy sauce
1 teaspoon sesame oil, divided into 2 portions
3 teaspoons vegetable oil, divided
Hot sauce
Salt and Pepper, to taste
Procedure:
In a medium nonstick skillet, add 1 teaspoon vegetable oil to the pan on medium heat.
Heat the oil until it shimmers, then add the egg to the pan and scramble, 3-4 minutes, or until cooked.
Once cooked, remove eggs from pan and set aside in a bowl.
Add the remaining 2 teaspoons of vegetable oil and 1/2 teaspoon of sesame oil. Increase heat to medium high.
Add in frozen peas, diced peppers, and scallion whites, cook until fragrant, stirring constantly, for about 1-2 minutes.
Add in the rice in an even layer, cook without stirring for 2-3 minutes, or until the bottom becomes slightly crispy.
Stir the rice and vegetables and cook 2-3 more minutes, stirring constantly.
Add back in the eggs and stir to combine.
Add in the soy sauce and the remaining 1/2 teaspoon of sesame oil. Stir to combine.
Cook for an additional minute while stirring constantly.
Add in the flaked smoked salmon and stir again.
Cook for an additional 1-2 minutes while stirring constantly.
Season with salt and pepper, to taste.
Serve immediately. Garnish with sliced green scallions.
Add hot sauce if desired.
