Quick Stir Fry with Smoked Salmon

Ingredients:

16oz Alaska Smokehouse Smoked Salmon, skin removed and broken into chunks

10oz of yakisoba or chow Mein noodles

4 eggs, beaten

3 chopped garlic cloves

8 green onions, chopped

7oz bean sprouts

2 tablespoons vegetable oil, like sunflower or avocado

Juice of 2 limes

4 tablespoons of sriracha or another hot sauce

2/3 cup sweet soy sauce

5 tablespoons soy sauce

Procedure:

Cook noodles according to package directions, then rinse with cold water and set aside.

In a medium bowl, whisk together the lime juice, sweet soy sauce, sriracha sauce, and regular soy sauce.

In a large pan over medium heat, add 1 tablespoon oil, then the salmon and garlic and heat through, 1-2 minutes, then remove from the pan and set aside.

Wipe the pan with a paper towel and return to heat and increase to high heat.

Add in remaining oil and add the eggs, stirring until cooked to your desired consistency.

Add in the onion, cooked noodles, salmon and garlic, and the sriracha sauce.

Stir fry everything for about 2 minutes or until the ingredients are coated in the sauce and warmed through.

At the end, add in the bean sprouts and stir well.
