Cucumber Canapes with Salmon Spread
Ingredients:
3.25oz Alaska Smokehouse Salmon Spread
4oz Alaska Smokehouse Smoked Salmon, skin removed and flaked
1/2 block of firm cream cheese (2.5oz), softened
3 long cucumbers
1 garlic clove, minced
1 lemon, zested and juiced
1/3 cup fresh dill, roughly chopped
Extra dill for garnish
Salt and pepper to taste
Equipment:
Food processor for smooth texture.
Piping bag and tip, for nice presentation of salmon spread on cucumber slices
Mandolin for even slices of cucumber
Micro planer or zester for lemon zest
Small melon baller to create wells in the cucumber slices
Procedure:
Add Salmon Spread, Smoked Salmon, Cream Cheese, Garlic, Lemon Zest, Lemon Juice and 1/3 cup of fresh dill to food processor.
Pulse food processor until smooth. Scrape down the sides as needed.
Season with salt and pepper to taste and pulse again.
Fill piping bag (with desired tip) with salmon spread and refrigerate for 5 hours until firm.
Cut cucumbers to 1/2" thick using a mandolin or sharp knife.
Using a melon baller or teaspoon, scoop a small well, about halfway through the cucumber slice, for salmon spread.
Pip salmon spread into cucumbers.
Garnish with dill and serve immediately.
Substitutions:
Feel free to use any of our salmon spreads or smoked salmon.
Add hot sauce to give it a spicy kick!
Chives can be substituted for dill.
This salmon spread can be served on crackers, toast points, or in puff pastry cups.
