Firecracker Smoked Salmon and Vegetables
Ingredients:
16oz Alaska Smokehouse Smoked Salmon, drained, cut into 4 equal pieces
2 tablespoons toasted sesame oil
2 tablespoons light soy sauce
2 tablespoons sweet chili sauce
1 green and 1 red chili, deseeded and thinly sliced
2 teaspoons fresh grated ginger
1 lime, zested and juiced
2 yellow or red peppers, deseeded and sliced
1 red onion, thinly sliced
1 tablespoon vegetable oil
4 bunches cherry tomatoes on the vine
Salt & Pepper to taste
Chopped fresh chives and/or flat leaf parsley and lime wedges for garnish
Procedure:
In a plastic bag, mix together the sesame oil, soy sauce, sweet chili sauce chilis, ginger, lime zest, and lime juice, then add in the cut salmon pieces and marinate for at least 20 minutes.
Turn oven to 450F or preheat a grill on high heat.
In a large sheet pan, add peppers and onions and sprinkle with vegetable oil.
Turn oven to Broil, and broil vegetables for 3-4 minutes (or grill).
Stir the vegetables, then bake for another 3-4 minutes.
Now place the 4 salmon fillets on top and drizzle the marinade over the fish and vegetables and add in the cherry tomatoes.
Broil for another 2-4 minutes, then remove from the oven and sprinkle with salt and black pepper.
To serve, garnish with fresh chives and/or parsley and lime wedges.
