Smoked Salmon Caesar Salad

Ingredients:

8oz Alaska Smokehouse Sockeye Salmon, skin and liquid removed and flaked

1lb romaine lettuce, rinsed and roughly chopped

1/4 cup grated parmesan cheese (fresh is best)

1-1/2 cups croutons

Caesar Salad Dressing Recipe (or can sub bottled dressing)

1 tbsp anchovy paste or 2 anchovies, diced

2 tbsp lemon juice

2 cloves garlic, minced

1/4 tsp ground black pepper

1/3 cup grated parmesan cheese (fresh is best)

1/3 cup extra virgin olive oil

Procedure:

If needed, make the dressing by combining the anchovy paste, lemon juice, garlic, pepper, and grated parmesan in a food processor.  Pulse the food processor to combine into a paste.

Once combined, slowly add in olive oil while food processor is running.

In a large bowl, combine the lettuce, salmon and dressing by tossing it gently.

Portion salad onto plates and garnish with croutons and grated parmesan.
