Smoked Salmon BBQ Flatbread

Ingredients:
8oz Alaska Smokehouse Smoked Pink Salmon, Skin Removed and Flaked
2 packaged flatbreads (roughly 4.5" x 11")
1/2 cup barbeque sauce
1 cup shredded mozzarella
1 cup shredded cheddar cheese
1 small onion, sliced
4 slices bacon, cooked and crumbled
1 small tomato, diced
1/4 cup chopped cilantro
2 tablespoons fried onions (like French's)
Procedure:
Heat oven to 400F.
Place flatbreads on baking sheets.
Spread barbeque sauce evenly onto flatbreads, then add cheese.
Top flatbreads with flaked smoked salmon, sliced onions, bacon, and diced tomato.
Bake for 5-7 minutes or until cheese bubbles.
Remove from oven and garnish with fried onions and cilantro.
Substitutions:
For a richer flavor, caramelize the diced onion in a pan with some butter or olive oil prior to assembling the flat breads.
For a sharper flavor, use a red onion instead of a yellow or white onion.
