Smoked Salmon Corn Chowder with Broccoli

Ingredients:

16oz Alaska Smokehouse Smoked Salmon. skin removed, liquid reserved

8oz Alaska Smokehouse Smoked Salmon, skin removed, liquid reserved

1/4 cup butter

2 small yellow onions, diced

1lb broccoli florets, fresh or frozen

1-1/2 cups seafood broth or vegetable broth (can sub chicken if needed)

1-1/2 quarts milk

8oz frozen corn, thawed

1/8 cup fresh parsley, chopped

3 tablespoons cornstarch

1/2 cup cold water

Salt & Pepper as needed

Procedure:

In a large bowl, break up the salmon into large chunks, then set aside.

In a large saucepan, heat the butter over medium heat until melted.

Add onions and cook until soft, about 3-5 minutes.

Add broccoli and saute with onions for 3-5 minutes.

Add in stock and bring to a boil, then reduce heat to low and simmer for 5 minutes.

Add in milk, corn, parsley, and reserved salmon liquid.

Mix cornstarch with 1/2 cup cold water until smooth, then add to soup and simmer, stirring constantly until thickened.

Add in smoked salmon chunks and cook for 2-3 minutes.

Season with salt and pepper.

Garnish with fresh parsley and serve with crusty sourdough bread.
