Smoked Salmon Burgers

Ingredients:
16oz Alaska Smokehouse Naturally Wild Pink Salmon, drained and skin on (optional)
1 egg, lightly beaten
1/4 cup finely chopped yellow or white onion
1/4 cup barbeque sauce, ketchup, or cocktail sauce
1 cup breadcrumbs
4 hamburger buns
lettuce, tomato, pickle and mayo as garnishes
4 cheese slices (optional)
Procedure:
Drain salmon and leave skin on for extra Omega-3 fatty acids.
In a large bowl flake salmon and mix in egg, onion, barbeque sauce and breadcrumbs.
Mix until almost smooth, then divide into 4 portions.
Ball those portions, then make patties.
If using an oven, move the oven rack to 4-5 inches from the heating element, then preheat the broiler setting on the oven to 450 degrees and oil a broiling pan to prevent sticking. Then place the patties on the broiling pan and cook 4-5 minutes per side
If using a grill, preheat grill to medium-high heat and oil the grill. Once heated, add the patties and cook 4-5 minutes per side.
If using a stovetop, add 1 tablespoon of oil to a skillet over medium-high heat and fry the salmon patties for 3-4 minutes per side, until crisp and golden.
If using cheese, add the cheese as soon as you flip the salmon patties.
To serve, assemble each bun as you'd like, then add the salmon patty to the bun.
Serve with chips or fries.
Substitutions:
For an Asian inspired salmon burger, substitute the barbeque sauce with teriyaki or hoisin sauce. For a Hawaiian take, add teriyaki sauce and grilled pineapple slices.
