Smoked Salmon Tetrazzini

Ingredients:
16oz Alaska Smokehouse Pink Salmon, skin removed and flaked, liquid reserved
8oz Spaghetti, or pasta of your choice
8oz sliced mushrooms, or (2) 4oz cans of sliced mushrooms, drained
2 cloves garlic, minced
1 tablespoon butter
2 tablespoons dry cooking sherry, or dry white wine (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
2/3 cup milk
1/4 cup green onions or chives, thinly sliced
1/4 cup shredded parmesan cheese
Procedure:
In a large pot, bring water to a boil and cook spaghetti according to package instructions.
In a large nonstick skillet, while pasta is cooking, melt butter over medium high heat.
Add mushrooms and garlic to skillet and cook for 5 minutes, stirring occasionally.
Add sherry and stir.
Add salt and pepper to mushroom and garlic mixture, then add flour and cook for 1 minute, stir constantly.
Add milk and reserved salmon liquid, then stir to combine, and simmer for 5 minutes or until sauce thickens.
Stir in salmon and green onions/chives and heat through.
Drain spaghetti, then add spaghetti to the skillet and toss to combine.
Garnish with parmesan cheese.
