Smoked Salmon Carbonara

Ingredients:

16oz Alaska Smokehouse Smoked Salmon, flaked and skin removed

3 zucchinis, washed and diced small

16oz Spaghetti

1/2 cup Grated Pecorino Romano or Parmesan Cheese, divided into two portions

6 Eggs, yolks separated and set aside

2/3 Cup Heavy Cream

2 tbsp Olive Oil

Fresh Herbs for Garnish like Parsley or Chervil

Salt and Pepper to Taste

Procedure:

Cook spaghetti according to package instructions, setting aside a cup of pasta water right before draining the pasta.

Mix egg yolks and half of the pecorino, then add in a tablespoon of the pasta water along with the cream and season with 1/4 teaspoon salt and pepper

When pasta is almost done cooking, heat oil in a large pan on medium heat.

Fry zucchini for about 4-5 minutes, then add in smoked salmon and warm through.

Add in spaghetti and stir, then add in the egg yolk mixture and toss in the pan for 1-2 minutes.

If sauce is too thick, add in a little bit of the pasta water thin it out.

Garnish with herbs and remaining grated cheese.
