Smoked Salmon Noodle Casserole

Ingredients:
8oz Alaska Smokehouse Smoked Salmon, skin removed and flaked
12oz of egg noodles
2 10.5oz cans cream of mushroom soup (can sub any cream of soup: asparagus, celery, broccoli, onion, or cheddar cheese soups)
2 cups shredded cheddar cheese, divided into two portions
1 cup frozen green peas (optional, can sub frozen corn or frozen broccoli)
4oz canned sliced mushrooms (optional)
1/2 onion, chopped
1 cup crushed potato chips (can sub breadcrumbs)
Procedure:
Fill a large pot with lightly salted water and bring to a boil on high heat.
Add egg noodles and cook until just tender, about 7 to 9 minutes.
Drain egg noodles.
Preheat oven to 425 degrees
In a large bowl, mix noodles, soup, smoked salmon, 1 cup shredded cheese, chopped onion, and your vegetables of choice.
Once well combined, empty bowl into a large 9x13 inch baking dish.
Top mixture with shredded cheese and crushed potato chips or breadcrumbs.
Bake until cheese is bubbly, about 15 to 20 minutes.
Let rest for 5 minutes, then serve.
