Smoked Salmon Hand Roll Kit

Ingredients:

16oz Alaska Smokehouse Smoked Sockeye Salmon, drained, skin removed, and flaked

2 cups cooked rice, recommend Calrose or sushi rice

2 large eggs

6-8 sheets nori

1 large avocado, thinly sliced

1/2 large red bell pepper, thinly sliced into 2-3" strips

1/2 cucumber, thinly sliced into 2-3" strips

2 scallions, diced

2 teaspoons rice vinegar

1/2 teaspoon granulated sugar

1/4 teaspoon kosher salt,

1/4 cup mayo, Kewpie if available

5 teaspoons Sriracha or similar hot sauce (optional to make spicy rolls)

1/2 teaspoon honey

Black Pepper as needed

Red pickled ginger, for garnish

Tobiko, for garnish

Sesame Seeds, for garnish

Soy Sauce, for dipping

Wasabi, for dipping (optional)

Procedure:

Cook the rice according to package directions.

In a large bowl, mix the warm rice with the rice vinegar, sugar, and salt.  Adjust seasoning as needed.

In a medium sized mixing bowl, add the salmon, mayo, sriracha (if desired), honey, scallions, and some black pepper and mix to combine.

In a small bowl, whisk the eggs and season with a pinch of salt and pepper.

Grease a large nonstick pan with vegetable oil and warm over medium low heat.

Pour the eggs in and coat the bottom of the pan until a thin layer forms. 

Cook until the edges are set, then gently flip the egg sheet and cook until the other side is set.

Once the eggs are cooked, transfer the egg sheet to a cutting board.  

When cool enough to touch, cut the egg sheet into thirds, then stack the three sheets and cut lengthwise into strips about 1/2" to 1" wide.

Stack the nori sheets on the cutting board a few at a time and cut in half lengthwise, then cut crosswise to make 4 smaller rectangles.  Repeat until you've cut all the nori sheets.

When ready to serve, if offering people the option to make their own, arrange the fried egg strips, sliced vegetables, salmon mixture, rice, and garnishes on a large tray.  If making ahead for people, assemble the rolls by spreading a thin layer of rice, topping it with the smoked salmon mixture, egg strips, sliced vegetables, and garnishes.  Rolls can be dipped into soy sauce and or wasabi if desired.

An optional garnish is to add Keta Salmon Roe, though this can be expensive and tough to find in certain areas.
