German Potato Salad with Smoked Salmon

Ingredients:
4oz Alaska Smokehouse Smoked Sockeye Salmon, skin removed and flaked
1-1/2lbs potatoes, yellow or red new
1 cup red onion, thinly sliced
1 cup celery, sliced with leaves
3 bay leaves
2 tablespoons butter
1 teaspoon mustard powder
1 teaspoon dried dill
1/3 cup red wine vinegar
Salt & Pepper to taste
Fresh Dill for garnish (if desired)
Procedure:
In a large pot of heavily salted water, add the bay leaves and potatoes.
Bring to a simmer over medium heat and cook until potatoes are very soft and easily pierced with a knife.
Drain the potatoes and set aside.
In a large pan, melt the butter on medium heat until it sizzles, then add the salmon and turn off the heat.
Salmon should warm through in about 1-2 minutes.
In the warm pan, mix the mustard powder, dill, vinegar, onions, celery, salmon, and butter.
Add in the potatoes and using a spatula or flat spoon, lightly crush the potatoes and the salmon while folding in and making sure the potatoes are dressed evenly.
Season with salt and pepper as needed.
Garnish with fresh dill if desired and serve warm.
