Kid Friendly Smoked Salmon Cakes

Ingredients:

16oz Alaska Smokehouse Smoked Salmon, Liquid Reserved, and Skin Removed

1 onion

2 tablespoons olive oil

2 eggs, beaten

1-1/2 tablespoons flour

Salt & Pepper to Taste

Oil for Frying

Lemon Wedges and Pickles for Garnish

Ketchup for serving

Procedure:

Cut the ends off the onion, peel it, then cut it into quarters and add it to a food processor.

Add in the smoked salmon, eggs, flour, and 1 tablespoon of the liquid from the smoked salmon.

Pulse with the food processor until it resembles a ground meat mixture.

Add more liquid if it appears too dry and pulse again.

Form patties with the mixture and set aside.

In a non-stick frying pan, heat oil over medium heat.

Add in the salmon cakes one at a time and fry until golden brown on each side, about 3-5 minutes.

Remove the cakes and set on a paper towel and repeat until all the cakes have been fried.

Serve with lemon wedges, ketchup, and pickles.

Options:

Can be served with chips or French Fries.

Can also be combined with other seafood like cod, pollock, shrimp, or crab, as long as it amounts to 16oz total weight of the seafood ingredients.  Make sure to remove shells and bones if using other seafood.
